La Cucina Italian Eatery is a family owned and operated restaurant. We are proud residents of the sunny Bayside suburb of Beaumaris. La Cucina encompasses the warm and welcoming atmosphere that makes Bayside so great.
Combining traditional Italian dishes with fresh local produce and authentic Italian methods, where you can enjoy our take on traditional Italian recipes, such as homemade pastas, woodfired pizzas & decadent desserts.


About the Role

Job Duties and Tasks
1) Plan and price menu items.
2) Monitor quality of dishes at all stages of preparation and presentation
3) Prepare and serve food in accordance with safe, sanitary food-handling practices.
4) Cook the exact number of items ordered by each customer, working on several different orders simultaneously.
5) Maintain sanitation, health, and safety standards in work areas.

6) Operate large-volume cooking equipment such as grills, deep-fat fryers, or griddles.
7) Turn or stir foods to ensure even cooking.
8) Season and cook food according to recipes or personal judgment and experience.
9) Observe and test foods to determine if they have been cooked sufficiently, using methods such as tasting, smelling, or piercing them with utensils.
10) Weigh, measure, and mix ingredients according to recipes or personal judgment, using various kitchen utensils and equipment.
11) Portion, arrange, and garnish food, and serve food to waiters or patrons.
12) Regulate temperature of ovens, broilers, grills, and roasters.
13) Bake, roast, broil, and steam meats, fish, vegetables, and other foods.
14) Wash, peel, cut, and seed fruits and vegetables to prepare them for consumption.
15) Estimate expected food consumption; then requisition or purchase supplies, or procure food from storage.
16) Carve and trim meats such as beef, veal, ham, pork, and lamb for hot or cold service, or for sandwiches.
17) Consult with supervisory staff to plan menus, taking into consideration factors such as costs and special event needs.
18) Butcher and dress animals, fowl, or shellfish, or cut and bone meat prior to cooking.
19) Bake breads, rolls, cakes, and pastries.
20) Prepare relishes and hors d'oeuvres

The Requirements:

* Knowledge and experience in modern and authentic Italian cuisine
* At least 3 years of commercial cooking experience as a Chef
* Must know how to cook with the wood fire oven
* Must know how to cook with the combi oven
* Relevant qualifications in cookery or hospitality and tourism
* Experience and knowledge in Italian cuisine is essential
* Experience in adherence to recipe & portion control, as well as ordering and stock control
* Ability to follow instruction & take direction
* Excellent time management and attention to detail
* Knowledge of food safety and hygiene standards
* Excellent communication skills and the ability to work as part of a team
* Be available to work on weekends to deal with many customers
* Available for split shifts and weekend work typical of hospitality
* Preferably Australian citizen or permanent residents
