Salary: $72,000 plus 11 % superannuation

Our client, SJJA Restaurants Pty Ltd. T/A Daughter in Law operates a contemporary restaurant,
café, reception and function centre that provides a warm, friendly & professional fine dining experience. Restaurant provides authentic traditional Indian cuisine along with, delicious seafood dishes & a modern Australian menu.

Situated on Little Bourke Street, close to the Parliament and the Princess Theatre, Daughter in Law is a lively 90 seater serving unauthentic Indian/ Australian food with an extensive wine and cocktail list.

Client is seeking a passionate and qualified Chef de Partie to join a highly skilled and supportive team in driving the business through great food. You will be responsible for assisting the Head Chef and the Restaurant Manager in all areas of the kitchen to deliver on SJJA Restaurants’ vision, standards and objectives.

As the Chef de Partie, you will be responsible for maximizing guest satisfaction by providing the highest level of quality and consistency in the dishes produced and contributing to the overall success of the kitchen, in accordance with the established standards of SJJA Restaurants and financial goals.

You should have a passion for cooking and a strong understanding of kitchen operations, including food safety, kitchen equipment and staff management. Chef de Partie will ensure each menu item is prepared on time and meet the presentation style and quality standard required.

You will be able to work side by side with Head Chef managing kitchen team during busy service periods ensuring high standards for food quality are met.

Qualifications and experience
• Must have at least 2 years culinary experience in a senior role with minimum requirement having completed a Diploma in Hospitality

In this role your main responsibilities include:
• Preparing and cooking menu items to the highest standard
• Ensuring food is prepared and served on time
• Contributing to menu development and innovation
• Ensuring consistency in food quality and presentation
• Monitor food and operating costs by reducing waste
• Maintain high food safety standards and procedures
• Monitor and adhere to OH&S requirements
• Ensuring that all dishes reach the hot plate or passe correctly garnished, the correct portion and size, presented on the correct serving dish in the prescribed manner
• Maintaining and ordering stocks and supplies
• Menu planning, development and costing
• Contributing to creating a harmonious environment amongst all staff within the restaurant
• In the absence of Head Chef, ensuring timely and quality service according to service specifications and customer expectations

Skills
The successful candidate will have a passion for the hospitality industry and be career focused. The key skills will include:
• Display outstanding culinary knowledge and passion for food
• Knowledge of stock control
• Knowledge of Nutritional and Allergy requirement
• Full understanding of food controls
• Understanding food safety, WHS and HACCP principles

You must be resilient and flexible with a positive can-do attitude to meet the demands in this fast paced environment and have the ability to remain calm under pressure.
